Happy Monday everyone! The weekend flew by all too fast as it normally does and now here we are battling the Monday blues (or is that just me?). My weekend consisted of food, family, & fun! I stayed home ALL weekend and only went out once, which was to the local CVS to pick up a few items. My initial goal was to not leave the house at all but when the kids are home, duty calls (meaning we needed milk and toothpaste really bad). We had our last family Christmas for 2017 on Saturday with my brother, SIL, and niece & nephew– who have grown WAY too much since I last saw them, which was in March of 2017 since they live almost 2 hours away. It was nice to visit and catch up with them and of course, my momma was there because she doesn’t seem them often, either. We also had our cousins and their kids over Sunday to celebrate one of their birthdays and made 2 awesome crockpot meals. I used my new Ree Drummond crockpot I bought myself for Christmas and I loved it! Find this one & other prints here. It’s stunning and cooks really well, too. I mean c’mon, who doesn’t love the beautiful floral print? I’m a sucker for a good floral pattern.
I made crockpot cheesy potatoes and chicken & dumplings, as well. The recipe for my super yummy (as my kids say) cheesy potatoes is as follows:
- 1 bag frozen shredded hash browns
- 1 stick butter
- 1/2 cup finely chopped yellow or white onion
- 1/2 cup sour cream
- 1 can Campbells condensed cheddar cheese soup
- 2 cups of shredded sharp cheddar (or colby jack if you don’t prefer the sharpness of the cheddar)
- Salt, pepper, and garlic salt to taste
First, chop the onion and put into a large microwave safe bowl with the stick of butter. Melt the butter for about 1 minute 30 seconds, until the onion is soft and translucent. Mix in the sour cream, soup, salt, pepper, and garlic salt (I just eyeball these amounts but if you would rather measure, I would say about 1/2tsp. of each). Once all that is mixed up well, you can either add the has browns to the bowl and mix until covered or add the soup mixture to the hashbrowns in the crockpot and mix in there (I find it easier and less messy to mix in the crockpot). Once the hasbrowns are covered, add your shredded cheese and mix well again. Once all that cheesy goodness is mixed up, switch your crock to low for 8 hours or high for 4 hours. Stir about every hour to prevent burning on the bottom. After they are done, plate them up and dig in! They are seriously SO good and I’m kinda mad I don’t have any leftovers from last night (they go fast in my house).
So enough about food, what I’m really excited about is my weekly prayer project that I began today. I did week 1 and 2 since I was a week behind buying it. I’m not going to go into too much detail because I’m not going to preach to all of you, but what really spoke to me was this: “Do not be anxious about anything, but in every situation, by prayer and petition, with thanksgiving, present your requests to God. And the peace of God, which transcends all understanding, will guard your hearts and your minds in Christ Jesus (Philippians 4:6-7)”. This jumped out at me and I enjoyed doing the journaling that went along with it. I worry about things before they even happen, I get anxious about every little thing, and I try to prevent things that just can’t be prevented therefore just about causing an anxiety attack. I am like the millions of other Americans that are prescribed medication for anxiety and yes it helps to some extent, but there is only so much a little pill can do; it’s not a magic bean, its just a little white pill to help me day in and day out. I feel like this prayer project will help calm my mind and soul, and maybe put me more at peace. I can say I feel a little bit better after journaling and praying today in which case is slightly helping battle this case of the Monday blues I have today. Usually it’s not this bad but maybe its the dreary day outside wrecking havoc on me, because it’s a pretty blustery, damp day in the mitten today.
