Happy Monday guys! I am actually enjoying a Monday– weird, right?! I NEVER enjoy Mondays but I’m just in a good mood today, even though it’s rainy and dreary in my neck of the woods. Gotta make the best of each day, right? Right. So anyways, it was a looong weekend and I say that because I was sick Friday and Saturday. Plus, Ben has been sick since Friday and I made him stay home from work today to rest because he seriously sounds awful so I can only imagine how he feels. I feel awful for him so I will be staying in tonight to take care of him because thats what good wives do :). Plus, I’m excited for the weekend so I’m hoping this week flys by!
My weekend started off Friday by picking up the kids and heading home for a pizza party! We had over our cousins and my in-laws for dinner and cake to celebrate Logans 12th birthday (which was actually Saturday). Besides being kind of grouchy since I didn’t feel all too well, it was a fun night and nice to see everybody. I called it a night early and slept until almost 12pm Saturday…oops! I NEVER do that! I am usually up by 8am but I know I wasn’t feeling good if I slept that late and to top it off, I went back to bed for 3 hours later that afternoon and woke up just in time to make dinner. On the bright side, I felt better after all that sleep. So for dinner, I made Logans favorite: homemade chicken enchiladas and Mexican rice. I found the recipe for homemade red enchilada sauce on Pinterest (find it here!) and you can tweak the spices to your liking. I always add a little extra chili powder, some extra garlic, and omit the oregano (but you can leave it in if you would like). It turns out soooo good and we never have any leftovers!
I also made chicken noodle soup in the crockpot since Ben is sick and like everybody says, chicken noodle soup is good for the soul. I got this wonderful recipe from Pinterest (like always) and of course I had to make it my own! Well sadly, the vegetables were too hearty for him to swallow with a sore throat so the kids and I have been eating the soup. It turned out SO good! Much better then a can of condensed stuff. I’ll give ya the recipe below! But before that, Sunday we got out of the house and went to our favorite breakfast spot– a little dive restaurant called Tip Top. They have the best pancakes and omelettes in Southeast Michigan, let me tell ya. Though by the time we were done, Ben was exhausted so we went home and watched Age of Adeline which is one of my favorite movies. If you haven’t seen it, check it out! We ended our day with chicken, homemade mac & cheese, and I indulged in a glass of Riesling before bed. Now, the coveted recipe:
- 3 large stalks celery, diced
- 3 large carrots, diced
- 1/2 yellow onion, diced
- 3 cloves fresh garlic, diced
- 4 cups chicken broth (plus 2-3 extra to add after the noodles have cooked, depending how soupy you like it)
- 1/4 flour
- 3 large chicken breasts
- Salt, pepper, and thyme (fresh or dried) to your liking
- 2 bay leaves
- 1 package Reames frozen egg noodles (or regular egg noodles, just need to cook longer)
First, dice up all your veggies and garlic and throw in the crockpot over top of the chicken. Whisk 1/4 cup flour with 1 cup chicken broth in a seperate bowl then pour over top veggies. Slowly add remaining 3 cups of thicken broth and spices, then stir. Cook on low for 6-8 hours, until vegetables have reached desired consistency for your liking. In the last hour of cooking, shred the chicken in the crockpot and add the egg noodles then turn on high for the last hour. Once the noodles are done, add in the last 2-3 cups of chicken broth, remove the bay leaves, then serve with a nice loaf of crusty french bread.
My oldest Kaylee is a chicken noodle soup connoisseur and she loved it so that means it must be good! I think I’ll be having that for dinner tonight.
Alright folks, I think I’m going to do a few more things at work then head home to check on the hubs. I’m sure he’s sleeping and the dogs are keeping him good company, but theres nothing like seeing your favorite person to brighten your day, am I right? Plus, I’m a germaphobe so I need the extra time to wash all the blankets and sheets tonight to prevent the spread of said germs all the while spraying Lysol everywhere.
