Happy Wednesday guys! We have officially made it halfway through the week! I was going to come at you last night with a new recipe post, but I got caught up watching SOA, like always. So, today I will be sharing that with you. Also, I gotta share how the #keto diet is going and actually, it’s going fairly well! I’ve been staying under 50-60g of carbs everyday since Monday and today is no exception! The food isn’t bland either and no, I’m not starving myself. I get quite a few food choices and snacks that are yummy and healthy. So anyways, lets begin with this #WhatUpWednesday post!

What I’m Eating

So last week I made burrito casserole for dinner. I didn’t partake in it because of the tortillas but I ate the meat portion and even that was SO good. We had no leftovers– the kids and Ben absolutely loved it! So, I’ll share the recipe with ya, I know you will want to try it.

  • 1 Lb. ground beef
  • 1 packet taco seasoning (or make your own, it’s super simple!)
  • 1 can refried beans (or any from your favorite restaurant– about 3/4 cup)
  • 1 can cream of mushroom
  • 1/2 cup sour cream
  • 1 package flour tortillas (use the large flour tortillas if using a pan larger than 9X13)
  • 2 1/2 cups cheese of your choice
  • Sour cream, taco sauce, salsa, cilantro, or any other toppings

First start off by browning the ground beef in a skillet. Once almost all the pink is gone, add in the taco seasoning and cook until beef is well done. Take off heat and add the refried beans; set aside. In a seperate bowl, mix together the cream of mushroom soup and sour cream, then set aside. Take your casserole dish and put down some of the sour cream mixture, then layer 3 tortillas on top of that. Add some of the ground beef mixture, some cheese, then 3 more tortillas. Another layer of sour cream, ground beef, cheese, and 3 more tortillas. Do one more layer and lastly, top with cheese. Bake at 350° for 15 minutes or until cheese is melted and bubbly. Cut into squares and top with your favorite toppings, then enjoy!

So yummy and easy to make! I had it ready to eat in about a half hour and it’s so filling, you don’t need any side dishes with this.

What I’m Watching

I am almost done watching Sons of Anarchy and it is SUCH a damn good show. I can’t. quit. watching! I have been binge watching it while I’m at work trying to finish it and I’m almost to the last season. So, if you watch it or have seen it before, can you believe what Tara is doing to Jax in season 6? I can’t believe she is divorcing him! Yeah, that is not an ideal life but she brought a lot of shit upon herself, too. And Gemma, well she is just looking out for her family (minus Clay now, RIP Clay) and wants whats best for Abel and Thomas. Okay so, if you have finished the show, don’t spoil it for me! I am 2 episodes away from season 7 and a huge plot twist I have heard is coming up. So much suspense!

What I’m Wearing

So we went to Signiature Harley Davidson in Perrysburg, OH a couple weekends ago and I finally got this fleece jacket I fell in love with months ago. It was on sale so I couldn’t pass it up. It’s so warm and cozy, I wear it all day, everyday. Especially at work because seriously, it is like the artctic tundra in my office. I am praying for sunshine and warm weather ASAP because I don’t know how much longer I can freeze my ass off and have numb hands.

What I’m Listening To

We use SiriusXM at work for background music and currently we have classic rewind playing (channel 25 for those of you who use Sirius, too). All the oldies but goodies play on this station. Queen, Foghat, Led Zepplin, Jimi Hendrix, and sometimes even Bob Marley (my fave!). I will say I am not a fan of all the songs but most of it is good and I think the day always goes by faster if there is good music.

What I’m Excited About

I am so very excited to start my 2nd job tonight! I will be bartending and cooking at our fave local bar, G&G. I’ve posted about it numerous times in previous posts and for those of you who follow me know it is our favorite spot to go after work.Well now I’ll be there pretty often since I will be slingin’ drinks and cooking up some amazing grub. I cannot wait to be bartending again– my passion in life♥.

Alright, thats it for today guys. I gotta get back to watching SOA because I paused it at a really good spot! I’ll be back tomorrow to explain this whole #keto diet I’m on a little better and give you some tips and snacks that are #keto friendly. Enjoy the rest of your day, I know I will!
