Hey hey loves! I’m back! Sorry I had to take a hiatus for a few months there but things were changing and life got a little crazy. I’m currently recovering from my third– yes, third– back surgery. So besides that, let me tell you what else has been going on in my life!

Hershey turned 7 in June and so I got her a pupcake to share with the other dogs.

Work has been crazy but I have been working part time it seems like even though I’ve worked from home a lot due to my back. Ben is still the most loving and fun husband ever and the kids are doing great! Speaking of the kids, they start school next week and…I will have a FRESHMAN in high school! *cue tears* 😭 The other two will be in 7th and 3rd grade.

I have made some mighty good recipes over the past few months, too. I will share with you my keto friendly (yes I’m still TRYING to do the keto diet) taco pie! It follows as below:

  • 1 lb ground beef
  • 1 packet low sodium taco seasoning (or you can make your own with whatever spices you like)
  • 1 cup taco seasoned cheese or any of your favorite cheese for a Mexican dish
  • 4 eggs
  • 2/3 cup heavy cream
  • Salt and pepper to taste

Just start by preheating your oven to 350° and greasing a 9×9 pan. Brown the ground beef, drain, add your spices and a little water. Mix it all up and set aside. In a separate bowl, combine eggs, heavy cream, and 3/4 cup of the cheese. Once that is mixed, add it to the ground beef and pour prepared mixture into your pan. Top with remaining cheese and bake for 35-40 minutes or until cheese is bubbly. Take out of over, let cool, and then top with desired garnishes. We topped ours with crushed tortilla chips, lettuce, hot sauce, sour cream, and cilantro.

And that’s it! So yummy and healthy. Better yet, your family won’t even know its keto friendly! My little family ate it all and said how good it was. I just wanted to tell them they had just eaten a keto dish but they never would have believed me. Its THAT good! You can find the recipe here and make it for your next fiesta dinner night!
