Happy hump day! We have made it halfway through the week and my birthday vacation starts TOMORROW! I cannot wait to do a #traveltuesday post next week about our little getaway. Anyways, I’m not going to ruin the surprise about where we are going, you can subscribe and come back next week and read all about it! So, let me tell you whats new & exciting in my life right now.

What I’m Cooking

I made the most amazing homemade spaghetti sauce last night! I served it with shell pasta and added meat to the sauce with a salad and bread. Next time you have a little extra time to spare on a night you’re serving spaghetti, you gotta try this! Here is the recipe below:

  • 2- 28oz cans crushed tomatoes
  • 5 tbsp tomato paste
  • 3 tbsp olive oil
  • 5 cloves fresh chopped garlic or 3 tbsp jarred minced garlic
  • 6 fresh basil leaves
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 3 pinches crushed red pepper (optional)
  • Salt and pepper to taste

Start by cooking the garlic in the olive oil for 2 minutes, do not let it burn. Turn down to a simmer. Then add the crushed tomatoes and 2 tbsp of the tomato paste, basil, and all other spices. Let simmer but every half hour, add another tbsp of tomato paste until you have used 5 tbsp to help thicken the sauce. Keep covered when not stirring. After 2 hours of simmering, if it’s too thick, add 2 tbsp of water or vegetable broth. Take off heat, let cool, and if desired, add cooked sausage or ground beef. Or, make it meatless and it’s just as good. Enjoy!

What I’m Excited About

I am so super stoked about our long weekend getaway! I’m going to keep it under my hat until next week but I will tell you this: there will be an amazing display of pictures to cure your travel blues if you can’t make a quick trip at the end of this summer.

What I’m Currently Reading

OMG, you guys! Have you read “Girl, wash your face” yet by Rachel Hollis?! It is a MUST for all us women to read! It touches on very personal topics and some that we don’t think about so much. I’m not super far into the book yet, but so far what I can most relate to & is my favorite part is: “Women disliked growing older because of what wasn’t happening”. How many of you can relate to this? I totally can, especially since my birthday was just a few days ago. I tend to dwell on goals I have not accomplished yet such as getting my degree (which I am currently in the process of doing…I just started classes last week!). To me, I feel like the only goals I accomplished so far in life is getting married and having kids by the time I was 25. So I don’t dwell, lets stop there. Though I will say she touches on topics such as motherhood, the big, bad “W” word (our weight!), our careers, and more. Pick up a copy at your local bookstore or Amazon today!

What I’m Watching

When I was recovering a couple weeks ago from my surgery, I was getting tired of the same shows every. darn. day. So, I asked my kids for a movie suggestion to buy and they said The Greatest Showman is an absolute must and boy, I am SO glad we bought that movie! It’s in my top 3 faves now. I’m normally not a fan of musicals but seriously guys, the music is damn good, good enough that I really want to buy the soundtrack. It makes you laugh, cry, get angry, and happy…all at the same time. Check it out today!

What I’m Listening To

Currently, I am listening to the Imagine Dragons. Their music is so catchy and just gives you all the feels. It plays almost every hour, on the hour on The Pulse on SirusXM. Whether it be their new song Natural or an old favorite like Radioactive or Whatever It Takes, they are all good and I could listen to them on repeat forever.

Okay guys, time to go finish watching a movie with the family. I’m taking a few days off to relax on vacation so I’ll be back Monday with a #weekendroundup(ish)!
